Founded by Tadashi Shiraishi, Kanoe stands as a tribute to his maternal grandmother, an embodiment of the ancestral wisdom we’ve inherited and continue to honor.
Our intimate environment, accommodating a select group of eight guests per night, provides a unique personalized journey. We guide our guests through an exploration of our sushi rice, an experience that unveils the delicate balance of temperature, acidity, and texture. This harmony evolves with the seasonal diversity of each fish we serve, making every visit a new and unforgettable experience.
